With all due respect to the Cadbury bunny and those hard working chicks out there, we think it’s fair to say that Easter has to be the worst thing that ever happened to eggs.

Only a few short days ago, eggs across the city were dyed, tossed, hidden and even disgraced on menus with titles like “Egg-Cellent Easter Brunch” and “Easter Egg-Stravaganza.”

Well, Easter is over now, and it’s time to give eggs back their self-respect.

Things start to heat up around Texas after Easter, and it’s a great time to spice things up by swapping out those Easter-style over-easy egg recipes for some spicy, flavorful huevos dishes.

The city of Dallas has always offered some of the best spicy egg dishes in the country, with a city full of chefs not afraid to create some bold brunch and breakfast items.

Around the city, diners can easily find liberal renditions of huevos rancheros and stuffed breakfast peppers – even egg dishes spiked with homemade chorizo and other zesty additions.

“Easter marks the true arrival of spring and heralds the hot summer ahead,” said Richard Blankenship, executive chef at CBD Provisions. “It’s a great time to spice things up on the table, particularly at breakfast or brunch. Spicy dishes are your stomach telling your brain that winter is over.”

Here are a few of the best spicy huevos dishes in the city:

Braised Tripe at CBD Provisions (pictured at top)
Chef Richard Blankenship kicked up his version of a fried egg for brunch with a dish he simply calls braised tripe. It’s the spiciest dish on the brunch menu and features minced tripe, house chorizo, smoked paprika, fried egg and chile flakes.

Breakfast Relleno at Café Brazil
Although the Breakfast Relleno has been on the menu at Café Brazil for years, it’s still one of the most ordered menu items. The dish is hot, comprised of a roasted poblano pepper filled with scrambled eggs, chorizo and cheddar cheese beneath a blanket of homemade spicy cream sauce and a side of fried sweet potatoes.

Oddfellows’ brunch is famous, with a typical hour-long wait time to prove it. But the time spent in line is always worth it upon the first bite of that piquant-tomato-based sauce doused over layers of tostada, sour cream, black beans, and fried eggs centered amidst a generous side of guacamole and herbed breakfast potatoes.
